Today i am posting sweet dish that is Patolea . a sweet dessert
6. Patolea
Pronounced as 'pathayo', Patolea is a sweet dish that may also be consumed along with tea. For the dish, Goan red rice is used with tamarind leaves (Haldi ka patta). A filling of coconut, Goan jaggery, and cardamom is made and stuffed inside the leaves (that have been lined with rice paste) and the leaves are then folded or wrapped and steamed for 20 minutes.

For the stuffing
Procedure
Soak the rice overnight. Remove the excess water and add some grated coconut snd some salt and grind into smooth, thick paste.
Then take turmeric leaves wash them and cut it into half if its big in size.
In pan add grated coconut and jaggery to it and mix them well and lastly add some cardamom powder to it mix well
and keep it aside to cool down.
Then take the leaves of turmeric apply the rice batter on to it and then take a spoon full of the stuffing place it over the one side of the leaf ,Now close or wrap them with the other side of the leaf. Ensure its sealed properly. Place them on a steamer alternatively .Keep few of stuffed turmeric leaves. Don’t stack them altogether just place few apart from each other and steam few at a time. You could also pressure cook them or steam in idli vessel.After 7-8 mins they would be ready the color of the leaves would change.
So now its ready to be served cool or warm it goes well with ghee also.

- Grated coconut
- Salt
